Make This Green Shakshuka For A Nutritious Meal

Craving something nutritious and filled with veggies this week. This variation of the North African breakfast dish, shakshuka, is filled with leafy greens, and protein-packed eggs. Whip up this recipe and serve it with a side of toasted bread or pita bread for brunch this weekend.

Green Shakshuka Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound fresh Brussels sprouts, quartered
  • 1 medium green pepper, chopped
  • 1 teaspoon kosher salt, divided
  • 1/4 cup reduced-sodium chicken broth or vegetable broth, divided
  • 3 garlic cloves, minced
  • 1 small bunch kale, trimmed and chopped (about 8 cups)
  • 1/4 cup fresh parsley leaves, minced
  • 4 large eggs
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon grated lemon zest

Green Shakshuka Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add 1/2 pound of quatered Brussels sprouts, 1 chopped green pepper, and 1/2 teaspoon of salt. Cook while stirring continuously until the veggies are lightly browned. This step should take about 10-12 minutes.
  3. Add 2 tablespoons of chicken or vegetable broth and 3 cloves of minced garlic, then cook for 1 minute longer. Fresh is always best but if you substitute fresh garlic for pre-minced garlic 1/2 teaspoon is equal to a medium clove so you will need 1 1/2 teaspoons of minced garlic.
  4. In batches if needed, add kale, spinach and parsley; cook and stir until wilted, 3-4 minutes.
  5. Stir in the remaining 2 tablespoons broth and 1/2 teaspoon salt.
  6. With back of spoon, make 4 wells in vegetable mixture; break an egg into each well.
  7. Sprinkle with feta and lemon zest.
  8. Cook, covered, until egg whites are completely set and yolks begin to thicken but are not hard, 4-6 minutes.

When to Enjoy This Yummy Meal?

Traditionally, shakshuka is enjoyed as a savory, vegetarian breakfast dish.
